CREMA DE CALABAZA ASADA CON NISCALOS SALTEADOS


Asar la calabaza potencia mucho el sabor  de la misma y hace que esta crema sea realmente deliciosa además de muy sencilla de hacer. Una de las cosas más importantes a la hora de hacer cremas de verduras y hortalizas es pochar bien todos los ingredientes, para mi realzan mucho el sabor de la crema final. Otra de las cosas super importantes es pasar por un colador fino la crema al final para que el resultado sea una crema de 10 (de hecho en casa tengo a alguno que no se come la crema si no está bien tamizada), os aseguro que cambia tanto el resultado que merece la pena invertir unos pocos minutos en hacerlo.

En el blog tenemos infinidad de recetas con calabaza, legumbres, arroz, sopas y cremas, tartas, bizcochos, etc. En el apartado de sopas y cremas podéis elegir entre:

Crema de calabaza y membrillo

Crema de calabaza y leche de coco

Crema de calabaza y coco

Crema de espinacas y calabaza

Crema de calabaza y zanahoria con leche de coco

Crema de calabaza y boniato

Crema de calabaza al moscatel

Sopa de calabaza y apio al tomillo

Sopa con calabaza y albóndigas de queso

Sopa de calabaza y albóndigas


Como podéis comprobar tenemos sopas y cremas para todos los gustos, ahora sumaremos esta que o bien la podéis hacer con níscalos en la temporada o bien con cualquier otra seta que os guste, con unos champiñones Portobello también quedaría perfecta.

Para hacerla vamos a necesitar:

1 kg de calabaza asada

 1 cebolla

1 patata mediana

Sal, aceite de oliva, pimienta.

50 gramos de pipas de calabaza

300 gr de níscalos limpios en trozos, si son pequeños enteros

1 diente de ajo pequeño

30 gramos de jamón en trocitos.


La calabaza la podéis asar tanto entera como en trozos, no es necesario que quede tostada solo que esté bien blandita (yo la hago en la freidora de aire) se puede hacer también en el microondas.

En una olla pondremos a pochar con un poco de aceite la cebolla cortada en juliana con una pizca de sal, cuando la tengamos bien transparente añadimos la calabaza asada, y la patata cortada en trozos, damos unas vueltas, salpimentamos y cubrimos con agua o caldo de verduras, también se puede poner un caldo de ave o una pastilla de avecrem. Dejamos cocer  hasta que la patata esté tierna.

Trituramos la crema y la pasamos por un colador fino, rectificamos de sal y pimienta (en casa nos gusta con bastante pimienta).

Salteamos las pipas de calabaza con un poco de aceite y sal, reservamos.

Limpiamos los níscalos y los partimos en trozos si es necesario.

En una sartén ponemos un poquito de aceite a calentar, cuando esté bien caliente añadimos las setas, dejamos que se hagan unos 5 minutos, añadimos el ajo en trocitos, salteamos unos minutos, por ultimo ponemos el jamón en trocitos y damos unas vueltas.

Servimos la crema bien caliente con unas poquitas setas salteadas y las pipas de calabaza.

Espero que disfrutéis con esta crema tan otoñal.
